1. Pre heat the oven to 400 F/ 200 C/ Gas Mark 6. Marinate the Lobster, Prawns and Hammour. 
 
2. Grill the Hammour, Lobster and  Prawns for 8 minutes. Transfer to an oven dish and cook in the oven for approximately 3 minutes. 
 
3.Take out from the oven and arrange the seafood on one half of each plate and place a selection of vegetable on the other half. Pour the sauce around the plate. 
 
Sauce:- 
 
1.	Place the chopped shallot, vinegar and wine in a sauce pan. Bring to boil and reduce to about 3 tablespoons. 
2.	Add the cream and reduce a little further. 
3.	Over a very low heat whisk in the required amount of butter until amalgamated. If the sauce is too thick add 2-table spoon water and pass through a fine sieve. 
4.	Add the lemon juice and season to taste.
