Slice injera flat bread into long, thin triangles, dust in flour and deep fry in oil until crisp. Mix half the cottage cheese with berbere. Melt butter over low heat. Blend chopped meat and dried red chili with melted butter and mix well. On each plate present a quenelle of meat, and quenelle of spiced cheese and a quenelle of plain cheese. Place the crisp injera in the center. Garnish with fresh herbs. Serve immediately. |
