Ingredients
100  gms     Beef tenderloin, ground
    Injera flat bread
20  ml     Spicy butter
60  gms     Cottage cheese
10  gms     Dried red chili
5  gms     Berbere (mixed spices)
1  tbsp     Flour
500  ml     Oil
      Fresh seasonal herbs (parsley, thyme etc)
      Salt
      Pepper
Preparation Method

Slice injera flat bread into long, thin triangles, dust in flour and deep fry in oil until crisp. Mix half the cottage cheese with berbere. Melt butter over low heat. Blend chopped meat and dried red chili with melted butter and mix well. On each plate present a quenelle of meat, and quenelle of spiced cheese and a quenelle of plain cheese. Place the crisp injera in the center. Garnish with fresh herbs. Serve immediately.
