Expo 2020 Dubai Plates Up Gastronomical Journeys With Bespoke F&B Concepts At Thematic Pavilions

Expo’s three Thematic Pavilions will be home to custom-made eateries and cafes


 

From culture-packed cafes to grab-and-go dining and plant-powered cuisine, the eateries at Expo 2020 Dubai’s three signature pavilions, Opportunity, Mobility and Sustainability, will give visitors a delicious taste of its subthemes.

Terra – The Sustainability Pavilion, is home a number of plant-based eateries, such as Floozie Cookie, serving up 100 per cent vegan cookies, baked on-site daily and bursting with a variety of plant-powered sauces, such as date caramel, speculoos cream, and dark chocolate ganache.

At Terra, diners will also find Veg’d, an all-day vegan restaurant by celebrity plant-based chef Matthew Kenney. With a vision to create beautiful, sustainable and nutritious plant-based dishes, Kenney employs innovative techniques and creative thinking to prepare minimally processed meals that are vibrant and wholesome.

XYST, on Terra’s first floor, brings Kenney’s plant-based approach to Mediterranean and Middle Eastern cuisine, using artistic licence to create vibrant, playful adaptations of traditional cultural dishes, while Mudrá is a beautiful rooftop bar featuring DJs, an exciting cocktail menu and plant-based cuisine, with amazing views over the Expo site.

Meanwhile, in Mission Possible – The Opportunity Pavilion, the focus is on taste education and interaction between food producers. In line with the subtheme of Opportunity’s message to unlock the potential within individuals and communities, Canvas by Coffee Culture, co-founded by Stephan Bhoyroo and Abdulla Ibrahim Suhail, is an Emirati coffee roastery designed to welcome Dubai’s ever-evolving creative community who seek a space in which to work, meet, design and create. The bespoke coffee/co-working space is filled with a culture programme to enrich the experience of community members, in minimalist industrial surroundings.

In Alif – The Mobility Pavilion, Alif Cafe by farm2table, brought to Expo by Abu Dhabi-based chef Jessica Queitsch, is a casual sit-down eatery that also offers a grab-and-go service. An ode to movement and connection, its gastronomical options shine a light on the heritage of key ingredients, such as coffee, rice, pasta and spices, showing how they have travelled throughout the silk route, influencing cuisine worldwide.

Food is one of the best ways to discover a different culture, and with a smorgasbord of 200-plus outlets, Expo 2020 is inviting visitors from across the globe to broaden their horizons and join the making of a new world as they explore an array of cultural and artistic attractions.
